Butterbeer Cupcakes

The butterbeer cupcake is essentially a brown sugar cupcake infused with cream soda and butter flavors. If that isn’t good enough, the cupcakes are then filled with a butterscotch ganache, topped with a rich butterscotch buttercream, and drizzled with more butterscotch ganache.

Ingredients:

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon butter flavoring
  • 1/2 cup buttermilk
  • 1/2 cup cream soda

Butterscotch Ganache 

  • 1 11 oz. package of butterscotch chips
  • 1 cup heavy whipping cream

Buttercream Frosting

  • 1/2 cup (1 stick) butter, room temperature
  • 1/3 cup butterscotch ganache
  • 1 teaspoon vanilla
  • 1 teaspoon butter flavoring
  • 1/8 teaspoon salt
  • 3 3/4 cups powdered sugar
  • 3 tablespoons heavy cream, approximately
